After a bit of thought, today I have decided that I want to become a Vegan. It’s a decision that has for me seemingly come out of nowhere but I believe could really give me the opportunity to shape my diet into something that is more beneficial to not only my health, but also the environment.
After trawling the internet for vegan meal ideas and benefits of the vegan diet, I have decided to jump in and give it a try. I have previously been vegetarian for many years, starting in Primary School when a routine trip to a farm where I befriended a male calf that unknown to me at the time was about to be slaughtered, ended in me refusing to eat meat from then on. After many years of not eating meat, I slowly introduced it back into my diet but the thought of that calf has never left me.
Currently, some unknown intolerance in my diet is causing havoc on my poor stomach and digestive system and is leaving me feeling uncomfortable, in pain and exhausted among other things. I feel that by eating a vegan diet I will feel more inclined to eat healthy, natural foods and steer clear of processed food that could be damaging my health. There are of course many more benefits to being a vegan including not participating in animal cruelty, leaving less of a carbon footprint and a whole variety of health benefits.
Basically what I’m trying to say in this post is that today I have made a decision I look to explore and learn from in the upcoming future. I am planning on easing myself into this change in diet and not doing it overnight. I did my first Vegan based shop today for some basics including soya milk, vegan butter and some chickpeas.
I will keep you all posted on how this change in diet goes for me and maybe even post some recipes and things too.
